Cucumber Salad

This recipe is for 1 person, but can easily be increased to feed as many as you want.
  • 1 cup cucumber pieces, sliced into thin 1/2 moons
  • 1/4 cup sweet onion, sliced thin
  • 2-3 tbsp white wine vinegar
  • 2 tsp honey
  • 1/4 tsp unprocessed salt
  • 1 grind or two of black pepper

Put the cucumber and onion in a small bowl. I drizzle vinegar over it until there is a shallow pool in the bottom of the bowl under the veggies. Drizzle a little honey over it and stir. Add the salt and pepper and stir. Taste and adjust seasonings.
