1-2 bunches fresh local carrots, peeled and cut into fry type shapes
garlic salt
1-2 tbsp virgin coconut oil, melted
1 cup mayo
2-3 tsp fresh squeezed lime juice
1/4 tsp celtic salt
1-2 tsp curry powder
1 tsp honey (optional)
Preheat oven to 400F.
Put prepared carrots into a large bowl and drizzle them with the coconut oil. Sprinkle with garlic salt and mix. Place on a parchment paper lined baking sheet and bake for 30-40 min.
To make the dip, combine the mayo, lime juice, salt, honey and curry powder in a small bowl. Mix to combine and refrigerate. Taste a few times while carrots are cooking and adjust seasoning if needed.
