Sautéed Baby Bok Choy

4 tbsp virgin coconut oil (the coconut taste is good in this recipe)
1 cup onion, finely diced
3-5 cloves garlic, crushed
1" piece ginger, peeled and finely grated
6 packed cups of cleaned and chopped baby bok choy
1 tsp sesame oil
2 tsp fish sauce
1 tsp honey
1 tbsp lemon juice
celtic salt
ground black pepper

In a large frying pan or wok sauté the onion in the coconut oil for 5-10 minutes over med-low heat. Once they are starting to brown add the garlic and ginger. Stir for 1 minute, until fragrant, and then add the baby bok choy.

I add the greens 1 cup at a time. When they have almost finished cooking add the rest of the ingredients and season with salt and pepper to taste.
