Mashed Cauliflower

Everybody has a way to do this, here is mine. 
The other day I made this and The Fiancé had taken a few bites before he asked why we were having potatoes when we were supposed to be on GAPS, ha ha.

1 head cauliflower, cleaned and cut into chunks
pan juices from roast chicken, see note
celtic salt

Steam the cauliflower until soft. Put it in a bowl and attack it with your stick blender. This could also be done in a food processor. When most of it is mushed up, drizzle with pan juices and sprinkle about a 1/2 tsp of celtic salt over it. Whip it some more. Taste and add more of the pan juices and salt if needed.

Note: We have started the dairy elimination part of GAPS so we aren't using butter. If we weren't doing this, my fat of choice would be butter... unless there were pan juices to be had as that makes it taste so very good. You could also use coconut oil. Once we have gone through the dairy elimination thing I will add cream as well.
