Scrambled Eggs with Veggies

Pick one veggie or a combo. Today we had shredded zucchini. We are off dairy right now otherwise I would have added a few glugs of cream to the eggs just before I beat them and I would have slathered shredded cheese over everything when it was almost done.

2 tbsp coconut oil
1/2 cup onion, finely diced
1-2 cups veggies (try shredded zucchini or carrots, or chopped spinach, arugula, bok choy, peppers, tomatoes, or asparagus)
1 clove garlic, crushed (optional)
celtic salt & ground pepper
5 eggs

Sauté onion in coconut oil for about 5 min over med-low heat. Add next veggie and garlic if using. They will take different times to cook. When pretty much done, beat the eggs in a small bowl and then pour them over the veggie mix. Sprinkle everything with salt & pepper. Keep stirring and scraping the egg mix with a spatula until finished.
