Meatloaf with Veggies

For the loaf:
1 lb lean ground pastured beef
1 lb ground pastured turkey
2 eggs from pastured chickens
1 cup onion, finely diced
1 cup carrot, grated
1 cup celery, finely diced
5 cloves garlic, crushed
1 tsp celtic salt
1 tsp ground black pepper

For the sauce:
1/2 cup homemade ketchup
1 tbsp Frank's Red Hot (or other GAPS friendly hot sauce)
1/2 - 1 tsp chipotle powder

Preheat oven to 350F.
In a large bowl, mix all ingredients for the loaf. Press it into a 9x5 loaf pan.
Mix the ingredients for the sauce in a small bowl and spread over the loaf. 
Bake for 1.5 hours.
